Chocolate Chicken Mole

This is based on an old Spanish-American recipe which uses bitter chocolate as its secret ingredient. It is said that the first Turkey Mole was created at the Convent of Santa Rosa to mark the arrival of the archbishop. In Aztec culture, chocolate was reserved for royalty, but not for women, since it was considred an aphrodisiac. Indeed.


Ingredients: 2 tablespoons olive oil, 1 onion, 3 garlic cloves, 1 chipotle pepper, 1 cup raisins, 2 cups chopped tomatoes, 3 tablespoons peanut butter, 2 cups chicken broth, 2teaspoons chili powder, 1 teaspoon pepper, 1 and ½ ounces unsweetened chocolate, ½ teaspoon cinnamon, 1 rotisserie chicken, ¼ chopped peanuts, 1 teaspoon sesame seeds, 1 orange, fresh cilantro, lime wedges, 1 avocado, flour tortillas


Directions:

In a pot over medium heat, coat it with the olive oil; add chopped onion and minced garlic; sauté for 5 minutes. Add chipotle, raisins, tomatoes and stir; bring to a simmer for 10 minutes. Pour the mixture into a blender; add peanut butter, broth, chili powder and cinnamon. Puree until smooth; season with salt and pepper. Return the mixture to the pot over medium heat. Cook for 15 minutes, stirring occasionally; add the chocolate and stir until melted. Remove the chicken meat from the bones; remove the skin; shred the meat and add to the sauce. Heat through.


To serve: Transfer the mole to a serving dish and garnish with peanuts, sesame seeds and orange zest. Serve with cilantro, lime, sliced avocado and tortillas.

Note: Older recipes include a more elaborate list of ingredients, such as the gizzard and heart of a turkey, lard and rabbit.
