Quick White Bean Chicken Chili in a Crockpot

This takes a mere 10 minutes and is another good winter’s day lunch or dinner.


In your slow cooker, put 2 cans of pre-cooked white meat chicken cubes. Add either a can of white beans or a small raw white bean. Wash and slice several ribs of celery and add. Add already shredded carrots. Add finely chopped onion, 1 tablespoon of minced garlic, and 1 tablespoon turbinado or brown sugar.


For spices, you can make more chili tasting by adding chili powder; for a milder flavor, add any kind of poultry seasoning, a little salt, black pepper, and a dash of Worcestershire. Over all pour 1-2 cups of low sodium chicken broth. Cook on high heat if you want soon…if all your ingredients were pre-cooked, you can have in an hour if cooked on high. If you’re in no hurry, cook on low.


Serve with crackers, rolls, or corn muffins.


Makes the house smell really good!
